Brief description: Excellent for making delicious appetisers, aperitifs and to accompany and enhance second courses and side dishes.

Production method: The artichokes are harvested between April and May, cleaned of the tough outer most leaves until reaching the light, tender heart, washed and blanched in a solution of vinegar and salt, drained well, placed in glass jars, covered with extra virgin olive oil and pasteurised.
